Sometimes a malt inspires a beer. Saison Ocho features malted Teosinte, an ancient ancestor of corn. This decidedly American Saison is created with the Teosinte, South Carolina grown and malted Palmetto Crisp malt, and just a bit of wheat malt. The beer was then hopped with a blend of Columbus and Simcoe malts, followed up by a massive Amarillo dry hop.
